1/4 cup coconut flour
2-3 tbsp erythritol or any sweetener of choice
1 tsp gluten-free baking powder
5 large eggs
1/3 cup almond milk unsweetened
1/4 cup coconut oil
1 1/2 tsp vanilla extract
1/4 tsp salt
Berries strawberries, raspberries and/or blueberries


In a large bowl, whisk all ingredients together until smooth.

Preheat griddle to 300 degrees.

Pour 1/4 cup batter onto griddle and cook for 2 minutes or until golden brown.

Flip and cook 1-2 minutes, until browned on the other side.

Repeat with the rest of the batter.
